The Story Behind Cedar Voyage

A journey that began with a simple belief: that food can be both deeply rooted in tradition and boldly innovative.

Where It All Began

Cedar Voyage opened its doors in 2019, born from a desire to showcase Canadian ingredients in ways that honor their origins while pushing culinary boundaries.

Our founder, Chef Antoine Rousseau, spent fifteen years traveling across Canada's provinces and territories, learning from indigenous communities, foraging with local experts, and understanding the deep connection between land and plate.

What emerged was not just a restaurant, but a platform for storytelling through food.

Our Culinary Philosophy

Seasonal Integrity

We build our menu around what's available each season, refusing to compromise by sourcing out-of-season ingredients from distant locations. This constraint becomes our creative catalyst.

Regional Partnerships

Every supplier we work with shares our commitment to sustainable practices. From the farmers who grow our vegetables to the fishers who bring us ocean harvests, these relationships define our identity.

Technique Meets Intuition

Classical training provides our foundation, but we trust instinct when it whispers that a dish needs something unexpected. The result is cuisine that feels both familiar and surprising.

The People Behind the Plates

Our kitchen is home to a diverse team of culinary professionals, each bringing their own perspective and expertise to the table.

Chef de Cuisine Marina Santos oversees daily operations with precision and warmth. Pastry Chef David Kim transforms simple ingredients into moments of pure joy. Sommelier Rachel Beaumont curates our beverage program with an eye toward discovering lesser-known producers.

Together, we form something greater than the sum of our individual talents.

Where Our Ingredients Come From

Within a 200-kilometer radius of our restaurant, you'll find the farms, forests, and waters that supply our kitchen. We've spent years building these relationships, understanding the land, and learning what thrives in each microclimate.

Spring brings wild ramps and fiddleheads. Summer explodes with heirloom tomatoes and stone fruits. Autumn offers squash varieties in every color imaginable. Winter might seem sparse, but root vegetables and preserved goods create their own magic.

This commitment to locality isn't just about reducing our carbon footprint, though that matters. It's about understanding flavor at its source and bringing that story to your table.
